Interesterification of Coconut and Pilinut Oil Triglycerides by Immobilized Lipase 6 6 - - - - - - - - . - . - 0 . - . - 0 .

ABSTRACT Immobilization of Candida cylindraceae lipase, Lipase D from Rhizopus delemar and Lipase F �Amano� on three support materials, Amberlite IRA-94s, pig bone particles (150-250 ?m) and activated carbon was performed. The performance of the immobilized enzymes on the interesterification of coconut and pili nut oil triglycerides was evaluated by comparing the relative amounts of selected triglyceride fractions of the original and interesterified mixtures. The highest adsorbed protein value per gram of support was obtained with Candida cylindraceae lipase on activated carbon. Pre-soaking of the support material appear to lower the protein value except for that on the pig bone support. The extent of interesterification was significat for Lipase D immobilized on pre-soaked and dried Amberlite and Lipase F on pre-soaked Amberlite. With Candida cylindraceae lipase, however, the interesterification profile for all conditions of the experiments did not show a. significant difference from that of the original mixture other than a slight increase in the PN48 fraction. Results indicate that pre-soaking of the support material and the amount of adsorbed enzyme affect interesterification performance.
